Quick and Easy Chocolate Truffles


Valentine's Day is tomorrow!  Did you forget to make something for your sweet hearts?  Afraid time has already run out?  Well set your mind at ease, there's still time to whip up some of the super quick super easy chocolate truffles before tomorrow.  They're vegan too, so they can be enjoyed by everyone on your valentine list.



You Will Need...


1 pound best quality dark chocolate
1 cup coconut milk
Toppings such as:
    Cocoa powder
    Shredded Coconut
    Chopped almonds
    Sea Salt

for about 3 dozen truffles

To Make...




First up, melt your chocolate.  Now you could be fancy and do this in a double boiler, but I have been converted to the microwave for my melting needs.  Place chopped chocolate in a microwave safe bowl and heat on half power for one minute at time, stirring in between, until chocolate is fully melted and smooth.


Once the chocolate is melted, slowly stir in coconut mild until thoroughly blended to make a ganache.  Place this in the refrigerator to set up while you prepare your toppings.


Once your chocolate ganache is set up and your toppings are prepared you are ready to make some truffles.  All you have to do is roll the gananche into bite sized balls and coat in your toppings.  I chose classic cocoa powder, shredded coconut, and chopped almonds and sea salt.


Delicious!  All that's left is to package them up for giving away.  In about an hour I made enough truffles to share with all of my local loved ones.  There's still time for you too.
